Cheese & Chive Beer Bread.

Everyone loves a Daddy, and a good Daddy needs to be pampered this Father's day! And what better way to nourish that dad bod, then beer and carbs? So why not combine them into Beer Bread?

This is one of the easiest and most adaptable recipes I have made! You can make it vegan, just swap the butter and cheese for vegan alternatives, you can swap the flavours, cheese and jalapeño is a good one too! You can even use a darker beer like a stout for a stronger beer flavour.  And one made you can use it in so many ways, toast it, butter it up, dip it dunk it you name it!

Ingredients 


350 g self-raising flour

1 tsp salt

1 tbs sugar

1 tsp onion powder

1/2 tsp garlic powder (optional)

1 tsp baking powder

340 ml beer (I used IPA)

100 g mature cheese, grated / shredded, plus a little extra for topping (I used Double Gloucester) 

3 tbs fresh chives, chopped (dried also works) 

50 g butter, melted


Method 


1 - 

Preheat your oven to 160 degrees C fan and grease and line a standard loaf tin with greaseproof paper and set aside. This is a good time to also melt your butter. 

Sift together your flour, salt, sugar, baking powder, onion and garlic powder (if using). Then, to this, add your shredded cheese and chopped chives and stir to combine. 

2 - 

In a mixing bowel, make a well in the centre of the flour mixture and pour in your beer. Mix with a spatular or wooden spoon until just combined and no dry spots remain. A few lumps here and there are ok.  Pour this mixture into your prepared tin and level out. Pour your melted butter over the top and bake for 30 mins. 

3 - 

Once the 30 mins is up, open the oven and sprinkle the remaining cheese on top and return to bake for a further 10 to 15 mins until golden brown, crispy and a toothpick, when inserted in the middle, comes out clean. Let cool in the tin for 10 mins before removing to a wire rack to cool completely. Slice and serve with lashings or butter or use to dip in a soup/stew or even chilli. You can even toast it!

This will store in an air tight container for 2-3 days at room temperature.
