Triple Decker Brownies.

Fancy a quick and easy treat for the kids this summer? or do you want something more indulgent to nurse those post social hangovers? well this is the perfect recipe for you!

Either follow the recipe below, or if you are feeling cheeky and are cooking with kids, you can use a boxed brownie / pre-made cookie dough mix and add extra chips and treats to the top…. Shhhh no one will know!


Ingredients 


For the brownie mix - 

200 g golden caster sugar

125 g plain flour

80 g dark cocoa powder

1 shot of espresso (or 1 tbs coffee extract / instant coffee granules)

1 tsp vanilla extract

1 pinch of salt

1 tsp baking powder

2 eggs

100 ml oil or melted butter. 

200 g chocolate chips (optional) - I used dark and white chocolate

For the cookie mix - 

100 g plain flour

80 g soft brown sugar

80 g butter softened 

1 tsp vanilla extract

1 tsp baking powder

1 large egg

100 g chocolate chips or M&M’

For the filling - 

2 packs double stuffed Oreos 


Method 


1 - 

Start by preheating your oven to 150 degrees C. Grease and line a 20 cm square brownie tin and set aside. 

Begin with your cookie mix. 

In a large bowl, add all of your cookie ingredients except the chocolate chips and mix until fully combined. You should have a soft cookie dough. If it is a little dry, you can add a touch more butter or oil. Once done, add your chocolate chips and mix to combine. Transfer the dough into your prepared tin and press into a single even layer. Top with a single layer of Oreos, you should get them to line up 4x4. Set aside to prepare the brownies.

2 - 

In a separate large bowl, add all of your brownie ingredients minus the chocolate chips and whisk together until you have a smooth lump free mix. If it is a little dry, add more oil or water to loosen. Add your chocolate chips and stir to combine. Pour the brownie mix over your prepared cookie dough and smooth into an even layer. Top with some broken up Oreos and chocolate chips to decorate if you wish. 

3 - 

Bake in the middle of your preheated oven for 30 to 40 mins or until a toothpick, when inserted, comes out clean with a few moist crumbs. Remove and allow to cool fully before slicing and serving. These will keep in an air tight container for 3 to 4 days.
