Utilising your sourdough starter discard.

Hopefully by now you have been baking your sourdough bread like a boss and nailing that coveted ‘ear’. If you’re like me and hate waste, you’ll be wondering whether you can utilise the discarded starter that builds up when you maintain your bread starter, and the answer is a resounding yes!

You can use your sourdough starter as part of essentially any recipe that uses flour and some form of liquid. What you have to remember is that a starter is essentially 50/50 flour and water, so 100 g of starter would replace 50 g flour and 50 g (ml) of water. There will be some minor maths required; however, this opens you up to a world of new tasty things to try, including sourdough pancakes, sourdough brownies and sourdough cookies (and loads more!)

I highly recommend this recipe for sourdough cookies from The Boy Who Bakes. They are so easy, delicious and use up a good chunk of that reserved discard. Click the button below for the recipe.

Alternatively, you can compost your starter or even use it as a face mask by mixing it with yoghurt and honey! I am very excited to have a sourdough spa day.

I will be sharing some recipes and tips on how best to use your sourdough discard and make some super yummy treats - watch this space!
