Going Bananas.


Is it just me or do you also see faces in food sometimes? Maybe I’m just going bananas!


Much like the rest of the world during lockdown, I was overtaken by the sudden urge to bake. And, like everyone else and their dog, I decided to make sourdough bread and banana bread. Apparently during a global pandemic, bread is the answer to all of our woes, no matter what shape or form it comes in. 

Upon making a few loaves of the oddly named banana bread (maybe banana cake was too basic a name), I’ve found that it is the perfect beginner’s cake, assuming you like bananas that is! I’ve found that it practically never fails, it keeps well if you’re single, live alone or, like me, don’t like to share cake. It is also great if you want something sweet but can’t stomach eating an 8” round three-layer rainbow sprinkle cake in one sitting (a challenge I’m willing to accept!). It doesn’t have any strange and expensive ingredients, and best of all, it makes use of bananas that usually would be thrown in the bin! It’s a win-win all around! 

So, when munching it down like there’s no tomorrow just like the rest of the country, I thought about what additional flavours could work with this humble cake - chocolate, caramel, rum, the list goes on! I decided to test some recipes and let's just say the results were tasty! Stay tuned for a series of recipes that will re-imagine banana bread forever!
